In the mid 1900s the Masachs family began to cultivate grapes in their home of Vilafranca del Penedes. Soon enough, Josep and Joan Masachs began to make Cava, and successfully began to market the traditionally styled sparkling wine both at home and abroad. Their Mas Fi Cava Brut is made from hand harvested Xarel-lo, Macabeo, and Parellada that is lightly pressed and fermented in stainless steel. Each grape is fermented separately before blending and secondary fermentation in bottle, where it then matures for a further ten months. Aromas of lemon curd, pear, and white flower are enticing as they lead you to a palate of fresh brioche, minerality and stone fruit. A finely bubbled sparkler, with a lovely finish. Enjoy with jewelled rice or fresh summer salads full of berries, and of course aged manchego .
