WHY WE LIKE IT: From single vineyard, La Llana, on the banks of the Ebro River in Rioja Alevesa. Alevesa is the coolest area of Rioja and one of the best areas for Tempranillo. The Unica is a selection of the best wines that are meant for the Sierra Cantabria reserva. TASTING NOTES: The 2017 Reserva Unica is made from 97% Tempranillo and 3% Graciano that was all destemmed and aged 24 months in 30% new French and America oak, this deep, concentrated 2016 packs some serious muscle in its blackcurrants, black cherry, licorice, toasted spice, and dried earth-like aromas and flavors. Medium to full-bodied, with a dense, concentrated mid-palate and ripe tannins, give bottles a few years in a cold cellar and enjoy over the following 10-15 years. PRODUCTION NOTES: T raditional vinification. 100% de-stemmed. Fermentation with selected indigenous yeast, total maceration time of 18 days. 24 months in 60% French and 40% American Bordelaise oak barrels. 30% new oak, 70% maximum three wine barrels. Racked regularly every four months during the first year and every six months during the second year. PARK PLACE SOMMELIER PAIRING: Pair with grilled/roasted meats in an herbal/savory preparation, hearty stews and tomato-based sauces. Try with Rigatoni in a Bolognese Sauce.
