Slightly amber golden yellow colour, nose of dried fruits, good acidity which reveals the finesse of almonds and walnuts on the finish, very complex wine. It goes wonderfully with a crayfish gratin, chicken with morels or a cheese platter (comte cheese/walnuts). Vinification: manual harvesting with a yield of about 30HL/HA It is the most typical king grape variety for the production of Jura wines. This wine is made without heat, it is from this plant that the sublime yellow wine comes. Vinification is naturally done in 228 L oak barrels for 3 to 4 years, an air vacuum is installed which causes the development on the surface of a veil of yeasts that protects it from oxidation. Fermentation is done from native yeasts at low temperatures (no laboratory yeasts or any additives). Bottled according to the lunar calendar, high category of cork stoppers.
