Rayun takes advantage of where they are. In the Central Valley of Chile, there are large changes between the daytime and nighttime temperature which promotes ripeness in the grapes but retains fresh acidity in the wines. The grapes were handpicked in the early morning hours during the last week of February and the first week of March. The fresh temperatures in the morning hours preserve the fresh and aromatic aromas of Sauvignon Blanc. The grapes were carefully pressed. A reductive fermentation took place in stainless steel tanks at low temperatures with specially selected yeasts that could enhance the citric and mineral notes that characterize Sauvignon Blanc. After fermentation the wine remained in stainless steel tanks on its fine lees for two months. Rayun Sauvignon Blanc is pale yellow in color. The bouquet is quite fruity, presenting aromas of fresh pineapple and green apples. It’s a great match with Prosciutto and melon, fried green tomatoes, goat’s cheese tarts, and quiche.
