The domaine was founded in 1872 by the Ponsot family in Morey-Saint-Denis. Most of the domaines holdings are in grand cru and premier cru vineyards, and Ponsot makes wines from such famous vineyards as Clos de la Roche, Clos de Vougeot and Corton. There are no sorting tables at Ponsot, bunch management is done in the vineyard. The wines go through uncontrolled ferments, and are not filtered or fined. New oak is completely avoided, wines are exclusively aged in used oak. This Grand Cru Climat of clay limestone owes its name to the monks of Beze abbey built in 1155. The chapel was re-built in 1457 after being razed after the revolution. Ponsot holds a densely planted, 1.73 acre plot which was planted in 1990. Ever since, the vines have been tended to biodynamically. The grapes are manually harvested into wicker baskets, pressed in a 1945 vertical press, and fermented with wild yeasts. The wines are aged in old barrels (5-50 years old) and gently racked after malo. Unfined, unfiltered, minimal SO2.
