Founded by an Irish family, Phélan Ségur has a history of greatness. Although the estate is historic, their approach is on the cutting edge. In the vineyard, respect for the soil is a daily preoccupation. The vineyards are ploughed, almost removing the need for herbicides. Others are grassed, on the other hand, which allows for less leaching and better control of vigor and the manuring of the soil is usually organic. In the cellar, each block is vilified differently with frequent pump overs and racking to favor extraction. The 2016 is a blend of 55% Cabrernet Sauvignon and 45% Merlot. In the glass it is deep red with purple hints. On the nose, aromas of blackberry, cherry and fleshy strawberry. On aeration, the nose reveals toast and licorice. The palate shows a smooth attack with a remarkable consistency and freshness, leading to a powerful finish of exceptional length. Pair with rich dishes like wild boar or venison sausage and smoked cheeses such as smoked Gouda.
