This super-cuvee is made by the Canon La Gaffeliere team from from a tiny vineyard of clay and limestone soil located next to Pavie Decesse, near Troplong Mondot and Tertre Roteboeuf. The site is of only four and a half hectares of sixty year old vines. A blend of 85% Merlot and 15% Cabernet Franc, It blew up the Bordeaux wine scene at the height of the garage wine movement with a monster 1996. Annual production is usually less than 1000 cases. All black fruit and raw power, be sure to pair with an equally rich meal. Braised anything and roasted game with green herbs is perfect. Gnarled and aged cheeses such as extra old Gouda or aged Parmigiano are the match.
